

Pancakes

Before you begin
This recipe is a British style pancake recipe. With this simple batter you can create thin or thick, sweet or savoury pancakes which serve as a perfect wrap for your favourite topping. This recipe can be made with both white or wholemeal Spelt flour. Why not experiment and try blending our flours. See which version you like the best.
Get Ready
Use a flat frying pan.
For the Batter: - per person
100 g White Spelt flour
(or wholemeal or 50/50)
a pinch of salt
1 egg
250 ml milk
Oil for frying.
For the Topping:
The most common topping in the UK is
1 tsp. sugar
a squeeze of lemon juice.
Sweet Suggestions:
Jam, chocolate spread, honey, nuts, fresh fruit etc.
Savoury suggestions:
Cheese, bacon, salmon.
Mix and Bake
Mix the batter

Sift the flour in to your mixing bowl.

Add the salt and stir it in.

Make little well in the centre and add the egg and a little milk.

Mix in the flour and keep stirring to form a smooth mixture, then add half the milk.

Beat well. Then add the rest of the milk.
Fry the pancake:

Add a little oil to the pan and heat.

Pour in some of the batter just enough to cover the bottom of the pan, tilting the pan to help spread it around.

Cook until brown. Lift the side of the pancake a little to see the underside.

Turn or flip the pancake (if you are brave) and brown the other side.

Slide the pancake on to a plate and add the topping.
The topping:

Sprinkle with sugar and squeeze the lemon juice, around over the pancake. Use a fork to roll up the pancake.

Or spread with one of the suggested fillings and roll up.

Variations:

Cut some bacon into small pieces and fry them in the pan before adding the batter. Then continue as above until browned on both sides. Slide onto a plate and roll up.

Chop or grate some cheese, follow step 1 and 2, then sprinkle the cheese onto the uncooked side of the pancake.

Wait until the first side has browned and turn the pancake. Continue with the rest of the steps. The cheese make stick a little to the pan, loosen it carefully so as not to break the pancake. (This is my favourite pancake!)
